Fermenters are also called CCT’s (Cylindrical Conical Tanks),FV’s (Fermentation Vessel), primar fermentor or unitanks.as they are used both
for fermenting and lagering.Fermenting is the process during which the yeast transforms the wort into beer. Lager takes place after fermenting and is the time given to the beer to stabilize and age after fermenting.
Fermenters can be individually temperature controlled through glycol jackets .The design of fermenters is based on our vast beer knowledge and especially the conical fermenter bottom.

When the wort is cooled to the temperature of 8-10℃in the plate heat exchanger,the wort enters into the fermentation tank through yeast adding tank after oxygenated.The fermentation temperature is 8-10℃.The ice water will cool the fermentation tank when the fermentation temperature is too high.
In the pre-fermentation period,the yeast will do aerobic respiration and breed rapidly(this period will take about 2 days).When the oxygen is used up,the yeast will do anaerobic respiration and it is the time of production of alcohol.The temperature will raise up in the period,then the cooling system will cool the fermentation tank and control the temperature is 8-10 degree(this period will take about 2-3 days).
After reaching a certain degree of fermentation,the yeast will down to the bottom of fermentation tank.In the period,the temperature need to down 1℃ per day(this period will take about 2 days).Then it is the time of after-fermentation after get rid of the yeast.In the period,the temperature need to down to -1℃-1℃.We need to add carbon dioxide to keep the flavor of the beer.
